The Perfect Wrap
Roasted vegetables are a delicious addition to any wrap and naturally add a hint of sweetness. They pair perfectly with a variety of proteins, but chicken is typically my go to. And how can you ever go wrong with hummus, my friend?!
This roasted veggie & chicken hummus wrap is a super easy lunch or dinner favorite of mine with a tasty combination of flavors and healthy amount of protein and good fats.
Although grilled or oven roasted veggies are my favorite, you can just as easily cook them on the stove top over high heat until slightly charred if you are short on time.
I’ve used a variety of meats in this recipe and love every one of them! Left over chicken, rotisserie chicken, ground turkey and ground beef would all be tasty. I’ve even chopped up some organic lunch meat before and used this as my protein for a super quick lunch!
Chicken Hummus Wrap Recipe

Ingredients
- Gluten free tortillas, naans, or wraps of your choice. I often use Ole Xtreme Wellness Plant Based Corn Tortillas. They are made with chia seeds and pea protein and have 9 grams of protein per serving.
- 2 tbsp garlic hummus
- 1 tbsp avocado oil
- salt and pepper to taste
- 1/2 tsp garlic powder
- 1.5 cups of fresh veggies (mushroom, onion, bell pepper, zucchini, and eggplant are all delicious!)
- 1-2 tbsp fresh feta (optional)
- fresh parsley if desired
- Olive oil & Red Wine Vinegar for drizzling
Chicken
- 1 chicken breast
- 1 tsp avocado oil
- salt and pepper
- 1/8 tsp of each: garlic powder, onion powder, oregano
Directions
- Preheat oven to 425 degrees F
- In a large bowl mix veggies with oil, salt and pepper, and garlic powder. Place on sheet pan and cook 10 minutes. Flip and cook additional 5 minutes.
- Heat 1 tsp avocado oil in pan over medium heat
- Add chicken to pan and season with salt, pepper, garlic powder, onion powder, and oregano
- Cook chicken until cooked through 10-12 minutes
- Warm up tortilla or wrap on stove top
- Spread hummus on wrap and top with veggies, chicken, and fresh feta.
- Drizzle with oil and vinegar and top with fresh parsley.
