This easy Paleo chicken stir fry is a quick and healthy weeknight dinner idea.
Shortly after I transitioned to a gluten and dairy free diet I began trying my hand at some Paleo recipes. The Paleo diet excludes grains, dairy, refined sugars, and processed foods all of which can potentially damage our digestive tracts and cause health problems.
The Secret Paleo Ingredient
I learned a couple of fun facts while eating this way. For one it is absolutely amazing all of the delicious and wholesome meals that can be made using only vegetables, fruit, nuts, meat, fish, herbs, and natural sweeteners.
Secondly, I discovered that there seems to be a secret ingredient in many of these recipes, one that I had never even previously heard of… Coconut Aminos! Made from coconut tree sap it is a bit salty, slightly sweet and pretty wonderful! From baked goods to meatloaf to Asian cuisine, Coconut Aminos is a staple in the Paleo world.
In this easy Paleo Chicken Stir Fry you’ll enjoy a variety of brightly colored veggies, seasoned chicken, and a tasty sauce made with coconut aminos that is both soy and gluten free.
Easy Paleo Chicken Stir Fry
Serves 4-6
Ingredients
- 6 Cups of veggies (I use broccoli, carrots, mushrooms, bell peppers, onion, and snow peas or sugar snap peas)
- 1.5 tbsp coconut or avocado oil divided
- 1.5 lb chicken
- 1/2 tsp each of onion powder, garlic powder, and parsley
- salt and pepper to taste
Sauce
- 1/2 cup Coconut Aminos
- 1/4 tsp red pepper flakes
- 1/2 tsp freshly grated ginger
- 2 cloves minced garlic
- juice of 1 small lime (about 1/8 cup)
- 1 tbsp pure maple syrup
- 2 tsp Arrowroot powder + 1.5 tbsp cold water
Directions
- Heat 1 tbsp oil in saute pan over medium high heat
- Cut chicken into 1/2 inch pieces.
- Season chicken and place in pan. Heat until cooked through and no longer pink in the center.
- Remove chicken from pan and chop veggies.
- Add remaining 1/2 tbsp oil and roast vegetables until slightly browned and a bit soft. Then add chicken back to the pan.
- In a bowl mix sauce ingredients together (except Arrowroot powder and cold water).
- Add Arrowroot powder and cold water to a separate cup and stir well.
- Pour sauce over chicken and vegetables. Bring to a boil.
- Reduce heat and add Arrowroot mixture. Stir well until sauce is thickened.
- Serve immediately over cauliflower rice (for Paleo) or brown rice or rice noodles.
