It’s the middle of winter here in the mid-west and I’m craving some sunshine and warmer temperatures! I figure I shouldn’t let these gloomy days put a damper on mood so why not why not bring a little taste of summertime inside to brighten things up? I’ve always been a fan of chicken salad, especially those with fruit added into the mix. Sweet and citrus fruits pair so well with chicken! In this cranberry orange chicken salad you’ll get a light and refreshing citrus flavor with a little bit of sweetness and a little bit of crunch!
How To Prepare Your Cranberry Orange Chicken Salad
I’ve recently been discovering how handy it is to prepare extra chicken for dinner one evening each week. Completing this one simple step means that you get to then enjoy the remaining chicken for left overs the rest of the week. I have no idea why it’s taken me 8 years of marriage and cooking thousands of meals to figure this out! Boy does this save on dinner prep time!
For this recipe I recommend opting for your choice of pre-cooked chicken. Boiled, roasted, and grilled are all great options! Place your chopped up chicken in a large bowl and begin prepping the remaining ingredients.
Zest your orange and then cut it in half. Squeeze one tablespoon of orange juice from one half and peel and cut the other half into small pieces to add to your salad. Chop up your cilantro or green onion and dried cherries or cranberries. Crush or slice your almonds. Add all of your ingredients (don’t forget the fresh ginger! It’s the star of the dish.) into the bowl and stir well to combine.
Cranberry Orange Chicken Salad

Ingredients
- 3 oz. cooked chicken (I’ve used boiled and sauteed, but even leftover grilled chicken would be delicious!)
- 1 tbsp freshly squeezed orange juice (Cara Cara oranges are my favorite!)
- 1/4 cup chopped up orange
- 1/8 tsp grated orange zest
- 1/8 tsp freshly grated ginger
- 2 tsp cilantro
- 1 tbsp diced dried cranberries
- 2 tbsp crushed or sliced almonds
- 1 tbsp mayonnaise (homemade or Primal Kitchen/ Sir Kensington’s are my go to’s)
Directions
- In a small bowl mix together all 8 ingredients.
- Enjoy your cranberry orange chicken salad on gluten free crackers (Van’s are wonderful) or sprouted grain bread with mixed greens!
