Cajun Shrimp Salad

A Favorite Spicy Summer Salad

This cajun shrimp salad is a favorite summertime (or anytime) lunch of mine for when I’m short on time, but still craving a delicious and flavorful salad. The shrimp and dressing amounts can easily be doubled so you can enjoy on day two as well!

The Benefits of Shrimp

Although shrimp can get a bad rap for its cholesterol content, it is an excellent source of protein as well as a variety of vitamins and minerals. In a typical 4 ounce serving of shrimp you will only get about half of your cholesterol limit for the day. You will also get over 50% of your daily value of phosphorus, vitamin B12 and selenium. Selenium has antioxidants used to fight off free radicals that damage cells.

To Prepare

This salad preparation is pretty straightforward and simple to put together. Simply chop and dice your veggies and mix together your dressing. Heat up your skillet and roast the corn for a few minutes until slightly charred. Remove corn from the skillet and add ghee. Sprinkle your thawed shrimp with the cajun seasoning and then place in the warm pan to cook until ghee is absorbed.

Assemble your cajun shrimp salad and enjoy!

1 Serving

Ingredients

  • 3-4 oz. Salad Shrimp fully cooked
  • 1 tsp Ghee
  • 1/2 tsp Cajun seasoning- homemade or organic store bought
  • 1-2 cups Mixed greens
  • 1 tbsp diced red onion
  • 1/2 small avocado chopped
  • handful of grape tomatoes
  • 1 hard boiled egg chopped
  • 2 tbsp chopped or crushed almonds
  • 1 small ear of corn or 1/4-1/2 cup frozen corn
  • 2 tbsp freshly grated feta cheese (optional)

Dressing

  • 1 tbsp mayonaise- homemade or organic store bought (I like Sir Kensington’s or Primal Kitchen)
  • 1 tsp lime juice
  • 1/4 tsp Cajun seasoning

Directions

  1. Heat ghee in pan over medium-high heat
  2. Add shrimp to pan
  3. Sprinkle shrimp with cajun seasoning and stir well
  4. Cook 5 minutes until ghee is absorbed and set aside
  5. In the same pan add corn and cook 2-3 minutes on high until slightly roasted. Remove from heat
  6. In a small bowl or cup add dressing ingredients and stir well to combine
  7. Assemble you salad: add remaining ingredients to a bowl and top with shrimp, corn and dressing. Enjoy!
