These pumpkin protein bars are a healthy and delicious fall treat, and sure to satisfy your pumpkin cravings!
There’s just something special about the colorful leaves, sweatshirt weather, and delicious flavors that make me look forward to September and October every year. Pumpkin flavors are one of my favorite things about the transition into fall. Although pumpkin pie will forever remain a favorite of mine, there’s no reason why we can’t enjoy a tasty sweet treat while keeping it healthy too!
How To Make Pumpkin Protein Bars
These can be made as no bake pumpkin protein bars or popped into the oven for a delicious smelling warm treat. They’re a clean eating, dairy free, and gluten free favorite autumn snack in our household!
I like to use Orgain Simple Plant Protein Powder for these bars, but any quality plant-based vanilla protein powder will do. Just be sure to pay close attention to the sugar content to ensure that the bars aren’t too sweet. You may need to scale back on the honey or maple syrup if need be.
Making homemade pumpkin puree is on my bucket list this season and you can certainly choose to use it in this recipe, but canned will work just as well too.
To make your bars begin by preheating the oven to 350 degrees F. In a food processor pulse the oats until they become a flour like consistency. Add the remaining ingredients to the food processor (except chocolate chips) and pulse until a soft dough is formed. Stir in the chocolate chips.
Line a 9×5 loaf pan with parchment paper and gently, but firmly, press the mixture into the pan (I like to use the back of a spoon to press it down). Bake 11-12 minutes, cool for a few minutes and enjoy! Best when served warm!

Pumpkin Protein Bars Recipe
Makes 6 large bars or 12 mini bars
Ingredients
- ½ cup Quick oats
- ½ cup Almond flour
- 1 scoop vanilla protein powder (I use Orgain Simple. For 30% off your first order at Orgain.com please use code: JoyFueled)
- ¼ cup pumpkin puree
- 2 tbsp honey or maple syrup (may need to scale back on this depending on if your protein powder is already sweetened)
- ½ tsp cinnamon
- 1/4 tsp each of nutmeg, cloves, allspice
- 3 tbsp dairy free chocolate chips
- 2 tbsp cashew butter
Directions
- Preheat oven to 350 degrees F
- In a food processor pulse oats until they become a flour like consistency.

- Line a 9×5 loaf pan with parchment paper and press mixture into pan.
