Chicken and Apple Sausage Patties (Paleo)

Breakfast meal options are a favorite in our household. With so many healthy possibilities it’s easy to enjoy these tasty foods any time of day. My children and I created this homemade chicken and apple sausage recipe recently while brainstorming something simple to whip up since it was just the three of us that evening.

I knew we had a winner when I came back to the table after stepping away for a moment to see that my 5 year old had taken it upon himself to stack another 3 patties on his plate! These super simple sausage patties are kid approved and momma loved (for taste and convenience sake).

How To Make Chicken and Apple Sausage

These chicken and apple sausage patties come together quickly with only a few basic ingredients. You can also make them in bulk for easy meal prep or freeze them to have on hand for busy weeknights. (If you cannot find ground chicken at the store you can substitute ground turkey or make your own ground chicken by placing chicken breasts into a food processor and pulsing until fully ground.)

Begin by gathering up your ingredients and a medium sized bowl. Then preheat your stove top to medium heat. Wash your apples and grate them into the bowl. No need to peel, the skins will add extra fiber along with additional K, A, and C Vitamins. I’ve used both fuji and gala apples for this recipe, but feel free to use your own favorite sweet apples.

Place the grated apples in the center of a cheesecloth or good ole clean dish towel. Squeeze the cloth/towel to drain excess juice from the apples. Please do not skip this step. It is very important that all of the excess moisture is removed from the apples or the sausage patties will not stay together properly.

Once your apples are ready to go, add in all of the ingredients to the bowl and combine thoroughly with your hands. Form into 5 large patties or 8 small patties. Add the ghee to your warm pan and place your patties inside.

You may (optionally) choose to drizzle the tiniest amount of pure maple syrup onto each patty for a nice caramelized sweet glaze. Heat 2-3 minutes on each side to brown then cover and cook an additional few minutes until cooked through and no longer pink. Serve with your favorite sides and enjoy!

What to Eat With Your Chicken and Apple Sausage

The possibilities are endless with this one! If you’re looking for some healthy ideas to pair with your chicken and apple sausage I’d suggest any of the following:

  • Egg casserole/ muffins
  • Hashbrowns
  • Air fryer sweet potatoes
  • Avocado slices
  • Avocado toast
  • Fresh fruit
  • Paleo biscuit (egg and sausage sandwich)
  • Smoothie
  • Sauteed veggies
  • Paleo blueberry waffles
  • Sweet potato breakfast hash
  • Breakfast tacos

Chicken and Apple Sausage Recipe

Serves 4

Ingredients:

  • 1 lb ground chicken
  • 2 medium apples (about 1 cup grated) I like gala or fugi, but any sweet apple variety will do.
  • 2 TBSP pure maple syrup
  • 1 tsp dried sage
  • ½ tsp sea salt
  • ¼ tsp pepper
  • 1/8 tsp cayenne pepper
  • 1 TBSP ghee

Directions

  1. Gather up your ingredients and a medium sized bowl. Preheat your stove top to medium heat.

  4. Add all of the ingredients to the bowl and combine thoroughly with your hands. Form into 5 large patties or 8 small patties.
  5. Add the ghee to your warm pan and place your patties inside.
  6. (Optional) Add a very tiny drizzle of maple syrup to each patty for an extra caramelized glaze
  7. Cook 2-3 minutes on each side to brown then cover and cook an additional few minutes until cooked through and no longer pink. Serve with your favorite sides and enjoy!
